Sausage Sheet Pan Dinner
I love that with this recipe you can chop almost everything a head of time and have dinner prepped the night before. I find that the chopping takes time and after school we tend to get busy before dinner. I can take the pre chopped veggies out of the fridge and quickly chop the other ingredients and have it in the oven in no time. I am all about quick dinners on week nights as we are all tired and hungry after school and generally want some time as a family to play and relax. This dinner can definitely give you that extra time. Not to mention all those extra lunches!!!
This meal is also nice as you're not stuck to the same veggies every time. You can definitely change it up depending on what is in season or what your family likes. Our boys seem to be loving brussel sprouts right now which is so nice because my husband and I also love them!
This is a nice fall/winter meal to help warm you up on those chilly nights. Unfortunately for us we have already started to have some chilly weather and I will now be thinking about all my fall favourite recipes. Watch for more to come!
Ingredients:
1 Pkg sausage (I like to use honey garlic for extra flavour)
1 bunch broccoli
2 - 3 Peppers
1 Onion
2 - 3 cups brussel sprouts halved
2 Yams
4-6 Potatoes
6 - 8 cloves of garlic either minced or sliced
olive oil (enough to coat everything so it doesn't stick to your pan)
Salt and pepper to taste
** You can use what ever veggies you want and mix it up depending on what you have in the fridge or what is available at the store that week **
Directions:
1. Preheat oven to 400 degrees.
2. Chop Potatoes and onion and add to roaster and coat with olive oil.
3. Chop and add the rest of the veggies and garlic and coat with a little more olive oil and salt and pepper.
4. Add cut sausage to the top of the sheet pan/roaster and bake for 30 minutes. Take out and give everything a stir and then bake for an additional 30 minutes.
