Chocolate Zucchini Cake


Well with our garden producing so much we have definitely had to try some new recipes as well as making some of our old favourites. This chocolate zucchini cake is a favourite of everyone in the house. This is such a versatile recipe that you can make the basic chocolate zucchini cake recipe and then add in any fixings if you wish. 

                                                 

We usually add chocolate chips either inside or sprinkled on top of our cake. However this time (pictured) we decided to try adding score chips and chocolate chips to the cake because why not!  I would say that if you’re going to add any fruit (raspberries, blueberries, etc) to the inside of the cake, give it a little extra baking time as it will add extra moisture to your cake. But definitely check it after 50 minutes and then assess how much more time you think you’ll need. 

                                                    

This cake is always a huge hit and with the added chips it was an even bigger success! We all love it and love how the zucchini keeps it from tasting dry like other chocolate cakes can. It's definitely one to try!

Ingredients
2 cups flour
2 cups white sugar
3/4 cups cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon 
1/2 tsp salt 
1 1/2 cups vegetable oil 
4 eggs
3 cups zucchini 
Approximately 3/4 cup toppings of your choice (chocolate chips, etc) 

Directions
1. Preheat oven to 350 degrees and prepare a 9 x 13 baking dish by greasing or greasing and flouring it. 

2. Add flour, sugar, cocoa powder, baking powder, baking soda, cinnamon, and salt and mix well. Add oils and egg to dry mixture and mix well (I use my stand mixer to make the cake). Once mixed add zucchini to the batter and mix again until well combined. Now is your time to add in and fixings in you want them throughout the cake. Otherwise add cake to prepared pan. 

3. Add any additional toppings to cake and bake in oven at 350 for 50-60 minutes. I do find the more I add to the cake the longer it takes to cook so make sure you check it to ensure it’s cooked.
