Kale Caesar Salad

I'm not usually one to make creamy salad dressings as it's not something I've generally done. But this creamy Caesar salad dressing is really good and super easy to make. I prefer to make this salad on nice crispy kale as it is a bit of a thicker leaf. However it is still good on other lettuces like romaine or leafy green lettuce. 

We're in the middle of our third heat wave this summer and it's only the beginning of July! This has meant that we have been doing lots of cold salads and BBQ cooking as we are not turning our oven on as we do not have Air Conditioning. Although we are seriously considering it as our boys are struggling to fall asleep at night as their rooms are still hot and the temperature outside hasn't had a chance to cool off yet. 

With the speed that our lettuce and Kale have been growing in our garden and the fact that we are wanting to eat cold foods we have enjoyed this salad a little more often than we might normally have. This dressing also adds a whole new level of deliciousness to any Chicken Caesar wrap as well. We made those for lunch today as we are having a heat wave right now and I was not making anything that had heat to it. We had left over chicken breasts from last nights dinner and I made the dressing and added it to some lettuce, avocado and Parmesan cheese and then wrapped it up in a tortilla


Ingredients:
4 - 6 Cups Chopped Kale 
1/2 Cup Parmesan cheese
1 Cup Croutons
1/2 cup mayonnaise
1/4 cup lemon juice
5-8 cloves garlic minced
1 Tbsp Dijon Mustard
Salt and Pepper to taste
*Optional Avocado*


Directions:
1. Mix Mayonnaise, lemon juice, minced garlic, Dijon mustard and salt and pepper until well combined. You can choose to add 1/4 cup of the Parmesan cheese to the dressing and then put the remaining in the salad or you can just add all the Parmesan to the salad. 

2. Add Kale, Parmesan cheese and croutons to a large salad bowl. Once you are ready to serve you can add the optional avocado and then add the Caesar salad dressing and make sure to mix well so all the Kale is coated with dressing.
